Welcome, Summer!

Finally it's summertime!
Time to enjoy ourselves, grill outside, put the winter blues in a box in our basement and be happy!
So funny how the seasons change and they change our eating habits too!
On Summer, all we want is practical, refreshing, flavorful meals to take advantage of what's best in this special season!

How about a quick snack or an easy  REFRESHING TUNA SANDWICH for lunch?

Recipe for 2:
1 can of Tuna (in water)
2 Tbsp. Light Mayo or Miracle Whip
1/2 lemon juice
1/4 diced onion
1 teaspoon of Dijon mustard
dill weed or thyme
ground black peeper
salt
Italian parsley (chopped finely)
4 slices of whole grain bread
1 carrot 
4 lettuce or spinach leaves

Bring 1 cup of water to a boil. Turn the heat off and throw in the diced onions. Let it soak while you mix the other ingredients.

In a medium bowl mix up the drained tuna, mayo, mustard, herbs, salt and pepper to taste. Mix it well and add the drained onions and chopped parsley.
For extra freshness, let the tuna paste sit on the fridge for an hour or so.
Make 2 sandwiches spreading the paste on every slice of bread and filling them with 2 leaves of lettuce and half a grated carrot each.


ARGENTINIAN MERENGADA WITH PECANS  
                                                                     (Serves 2)

4 scoops of vanilla ice cream (your favorite brand)
1 teaspoon vanilla extract (optional)
1 Tbsp. Ground Cinnamon
2 Tbsp. halved pecans

Mix it all in a medium bowl, quickly so the ice cream doesn't melt. Split into 2 serving bowls. If not served immediately, put it back in the freezer.
