Flan de Chocolate

Desespero por chocolate! Foi ele quem me motivou a buscar uma receita de flan (não pudim!!) de chocolate. 
De dieta, morro de vontade de beliscar um chocolate ou um doce mas não posso cair em tentação! Pensando nisso e me baseando na receita do flan que encontrei em um outro site de culinária, criei o meu próprio 
FLAN LIGHT (E QUASE DIET) DE CHOCOLATE!
A receita original é de um livro do Leite Moça da Nestlé dos anos 80 ou 90! Mas claro que eu não podia usar leite condensado! Minha experiência na Indústria Alimentícia me ajudou a saber q eu poderia usar o leite evaporado! (leite com parte da água retirada por evaporação, leite concentrado)
Se vc, como eu, quer manter a linha pelo menos durante a semana mas não abre mão do sabor verdadeiro do chocolate, caia de boca neste docinho!
Flan é leite gelificado, no meu caso, com gelatina. Pudim já é um doce que envolve cozimento, ovos etc...

Ingredientes (para uma fôrma pequena de pudim. Dobre as quantidades para a forma grande)
  • 2 envelopes de gelatina sem sabor 
  • 100mL Água quente
  • 1/3 xíc (chá) chocolate amargo picado (ou o seu preferido)
  • 2 a 3 col (sopa) cacau em pó
  • 3 col (sopa) cheias de açúcar de confeiteiro
  • 3 envelopes de Splenda (ou 1 envelope de aspartame)
  • 1 lata (350mL) Leite evaporado desnatado
  • A mesma medida (da lata) de água ou leite desnatado

Preparo
Dissolva a gelatina sem sabor nos 100mL de água fervente. Reserve.
Derreta o chocolate com a medida de água no microondas ou em banho-maria.
Jogue todos os ingredientes no liquidificador e bata bem.
Coloque em uma forma e deixe gelar por, no mínimo, 4 horas.
Desenformar é fácil: mergulhe a forma em água quente por alguns segundos e inverta em um prato ou travessa redonda. 
Delicie-se com o sabor do chocolate de verdade mas pouca gordura e açúcar! :)

Bom, não sei se no Brasil ainda vende o "IDEAL", leite evaporado da Nestlé. Caso não venda, use leite e não use água na receita (somente os 100 mL suficientes para dissolver a gelatina). Onde eu listei 350mL de leite evaporado vc vai colocar leite normal. Ou seja, sua receita deve ter 750mL de leite. Vai dar certo!
Se preferir, use o leite condensado light Moça e não adicione nem açúcar nem adoçante.
Se ainda assim precisar continuar no diet, use a receita de leite condensado diet abaixo e suprima a etapa do açúcar.
Vale a pena como uma sobremesa refrescante ou pra matar a vontade de comer chocolate numa dieta!
Essa receita é pra quem gosta de chocolate meio-amargo, o sabor é bem marcante! Se vc gosta de chocolate ao leite, use este tipo no chocolate picado e acrescente mais açúcar ou um pouco menos de cacau em pó!
Nào fica lindo e com cara de doce de verdade assim polvilhado com cacau!? :)


Em tempo! Gelatina não solidifica com leite soja! Se vc for intolerante à lactose, use leite deslactosado. 

Leite condensado diet
1 xíc (chá) Leite em pó (desnatado ou integral)
1 col (sopa) adoçante culinário
1/2 col (sopa) manteiga
3/4 xíc (chá) água fervente

Bata todos os ingredientes no liquidificador. Leve ao fogo até levantar fervura, mexendo de vez em quando. Espere esfriar e guarde em um vidro bem tampado, na geladeira, por até 3 dias.

Stir-Fry: a base do yakissoba

De comida oriental eu não entendo nada, mas sei que este prato, aqui nos Estados Unidos conhecido como stir-fry, é sucesso garantido! É uma versão do molho do yakissoba. 
Fácil e rápido de fazer e tem um sabor bem diferente pra vc variar o cardápio sem ter que se desdobrar muito. O mais difícil talvez seja achar o óleo de gergelim (que pode ser substituído por óleo de amendoim tb!!)
Conheça aqui a minha versão desse sofritto de legumes e carne!
Vamos lá?


Ingredientes (4 porções)
400g (1 pacote) Linguine ou spaghettini
300g de peito de frango ou filet mignon limpo, cortado em cubos (ou uma mistura dos 2)
100g Ervilha torta
1/2 pimentão amarelo
1/2 pimentão vermelho
3 cenouras pqns. cortadas em tiras pequenas
1/2 cebola em cubos (roxa pra dar um colorido!)
1 xíc. (chá) água ou caldo de legumes/frango
2 col (sopa) Amido de milho
Shoyu e teryiaki a gosto
Óleo de gergelim ou amendoim a gosto
Sementes de gergelim e cebolinha p/ salpicar 

Preparo

1. Faça a massa de acordo com as instruções da embalagem. Normalmente eu uso bastante sal na água mas pra este prato, por causa do shoyu, eu prefiro usar no máximo 2 col (sopa) de sal.  
2. Enquanto a água ferve ou a massa cozinha, use uma panela tipo frigideira funda e grande para fritar a cebola e a carne escolhida. Use só um fiozinho de óleo ou azeite. Frite até dourar mas não deixe cozinhar por completo ainda. 

3. Acrescente os legumes à carne e deixe fritar mais uns 3 minutinhos. Coloque metade da água e baixe o fogo para médio deixando a mistura cozinhar de 8 a 10 minutos. 
3. Quando a carne estiver completamente cozida e os legumes com a consistência desejada adicione o shoyu, o teryiaki e o óleo de gergelim ou amendoim e o restante da água já com o amido de milho dissolvido. Deixe cozinhar até engrossar sem parar de mexer. Lembre-se de que vc está preparando um molho, ou seja, vc precisa de líquido para cobrir sua massa. Coloque mais água se necessário.
4. Retire do fogo e cubra a massa com essa mistura, raspando todo o líquido do fundo da panela. Sirva coberto com gergelim e cebolinha picada. 

Dicas

Experimente uma versão com menos líquido e sirva com arroz selvagem ou integral;
Facilmente transformado em prato vegetariano se vc não colocar frango nem carne;
Troque os legumes pelos de sua preferência. Vale couve-flor, brócolis, pimentão verde, salsão ...

My stir-fry

My take on a nice stir-fry! Perfect for any weeknight dinner!
Make healthy choices by using lean and preferably organic chicken breast and by using low sodium sauces.
Give it a try! I almost guarantee it will be a good change on the menu and the entire family will love it!






Ingredients (4 Servings)
400g linguine, linguine fini or spaghettini 
10 oz Boneless, skinless chicken breast or filet mignon (or a mix of both)
3 oz Sugar snap peas (1/2 package of steamers)
1/2 big yellow bell pepper + another 1/2 of a red one
3 carrots cut in thin lengthwise slices
1/2 onion (I use red sometimes to add more color to the final dish!)
1 cup water or vegetable broth
2 Tbsp Corn starch
Soy sauce to taste
Teryiaki sauce to taste
Sesame oil and seeds (optional) to taste
2 chives or scallions cut in little pieces to sprinkle


Preparing the dish
1. Make the pasta according to the packaging instructions. Usually I am not shy with salt when cooking pasta but for this stir fry I'd use about 2 to 3Tbsp of salt in for the amount of pasta suggested. Cook it until al dente.
2. While your water is boiling or your pasta is cooking, use a large skillet to fry the onions & the meet of your choice with a touch of oil or a spray of PAM until it's brown outside but halfway cooked inside. Add drops of water as needed to keep your meat frying. 
3. Add the vegetables to the meat and sautée. Add half of the water and let it simmer for about 8 to 10 min.
3. Once your meat is cooked and you've reached the desired consistency (some people like their vegetables softer, some crunchier) add the remaining water with corn starch dissolved to it and the soy sauce and keep cooking until the liquid thickens. Add the sesame oil on this step, if desired.You need enough volume of sauce to cover all the pasta. Feel free to add more water for volume and creaminess if necessary.
4. Remove from heat and set aside. Drain your pasta and cover it with the sauce. Season with teryiaki sauce, chopped scallions and sesame seeds.


Tips
Try serving with less liquid on the side of whole grain or wild rice.
Steam the sugar snap peas for half of the time indicated in the package before frying it.
Swap vegetables and add your favorites instead: broccoli, red pepper, celery...

Jell-O

So boring, I know! Why would I post something about JELL-O!?
Because this was inspired by a nice recipe I found on the internet and so I decided to make my own, picking my jell-O flavor and my favorite fruits. It makes Jell-O actually fun! And helps my diet since sugar and fat free jell-o means no calories!


Getting it out of the pan can be tricky, but not hard at all.


HAVE FUN!


You're gonna need a 6 cups capacity angel food cake pan or bundt pan.


Ingredients
♥ 2 packages of Jell-O (I chose sugar free peach)
           < prepared with 10% less water than regular packaging instructions >
♥ 1 + 1/4 cups fruits (at least 3 different kinds)


Preparing the jell-o
Wet the pan of your choice sprinkling and spreading some water all over its inside. (This will help taking the jell-o out of the pan).
After dissolving all the Jell-O according to this recipe, fill the bottom of the pan with about 1/3 of the liquid and distribute the fruits around it. Leave it in the fridge for about 35 minutes or until slightly set.
Make another layer of jell-o liquid + fruits. Back to the fridge and then make the last layer.
Let it cool in the fridge for about 4 hours or overnight.
Let it outside of the fridge for about 5 minutes. Put a plate covering the pan and turn it upside down. VOILÀ! You should have a perfect, cool jell-o/fruit dessert!


Told you Jell-O could be fun! Indulge your sweet tooth. Guilt free!
A nice variation would be making half of a pudding recipe, something that will set well and cover the bottom of the pan with that. Then star with the layers of jell-O.


♥ The fruits I picked and other cool options:
Raspberries
Blackberries
Blueberries
Grapes
Strawberries
Kiwi
Carambola
Pear or apple cut with cookie cutters in different shapes
etc...


Tips:
Don't forget to spray the pan with water to make it easy when transferring the dessert to the plate
Serve it on a cake platter for a fancy look
To make it look chic, you can try edible flowers or fresh peppermint leaves with the fruits too;
Choose a light, transparent jell-o flavor so your fruits can be seen! Peach, pineapple or unflavored gelatin with fruit juice are perfect options.
IMPORTANT: If you're making your own gelatine, DO NOT USE PINEAPPLE JUICE as it won't set! Enzymes will eat the gelatine and you'll end up with a gooey mess!

Moist and Healthy Oat Bran Muffin

This recipe was sent to me by my friend Natasha whom I met when living in Evansville in 2008. Good times!!
I still haven't tried it but just looking at the picture of the one she made made my mouth water! Cannot wait to try it. And it is super healthy indeed!
Way to go, Natasha! 
My mom will be the first one to try, I can guarantee you!


♥ Ingredients
   2 ½ cups Oat Bran
   ½ cup Whole Grain Flour
   2 tsp ground Cinnamon
   1 Tbsp Baking Powder
   3 Tbsp Brown Sugar
   2 XL Egg Whites
   1 Egg (enriched egg)

   1 ¼ cups Evap. Milk (Fat Free)
   2/3 cup Sugarfree Applesauce
   1 Tbsp Canola Oil
   1 tsp pure Vanilla Extract
   Toasted flaxseed



♥ Preparing the muffins
Preheat the oven to 425 F and coat a 12 cup muffin tin with a brush of butter (or
line with paper baking cups) - Sometimes I use Baker's Joy or any other spray with flour. 
Combine the dry ingredients in a mixing bowl and blend well. To create some lightness in your muffins, whip up the egg whites and whole egg before adding the remaining liquid ingredients to the eggs. Then spoon
your dry mixture into the liquid until flour disappears (if you like nuts or fruit in your muffins, you can add them now). 
Fill the muffin tins to the rim, place in the preheated oven, reduce heat to 400 F, and bake for 15 to 20 minutes or until the tops show lightly brown.
Let cool, serve with some omega-3 rich flax seed, a pat of butter or fruit preserve.

Miniature Esfiha

Today I tried to change the menu without giving up my diet (yes! Just for a change, I am on a diet!) and I picked a Middle East inspired dish. Actually, the whole nine!: taboule (wheat salad) with cucumber, tomatoes and sour cream, kafta (kinda like a burger on a skewer but seasoned with allspice, cinnamon and ground pepper!) and, the star of today's post, the ESFIHAS! YUMMY!!


Esfihas are kinda like turnovers that you bake. They are usually filled with ricotta or ground beef or cooked escarole.
It's not the fastest thing to make, I'll admit, but it doesn't take that long and the result is an amazing homemade meal!
I made my esfihas filled with seasoned ricotta, but you can use ground beef, escarole with white raisins, cheese & zaatar, chicken...


Dough (yelds about 25/30 esfihas)
- 50g fresh yeast or 1 Tbsp of dry yeast
- 1 cup + 4 Tbsp Warm water
- 1/2 cup Canola oil
- 1/2 Tbsp salt
- 1 Tbsp Sugar
- 550g Wheat flour(approximate)
I used 250g of whole grain wheat flour!
- 1 beaten egg to brush on top of turnovers before baking



Preparing the esfihas
Mix all ingredients, except for the wheat flour and egg, in the blender (or by hand using a fouet). Little by little add the flour mixing with a fork, initially. Then add the rest of the flour and finish kneading the dough by hand.

Let it seat in a warm place for 20 to 30 minutes.
In the meantime, make the filling of your choice.

Ricotta filling (enough for HALF of the dough! Make sure you souble it if you plan on making all 30 the same flavor!)
- 300g (10 OZ) Ricotta
- 1/4 teaspoon salt
- Ground pepper + ground cinnamon to tast
- pinch of ground cloves
- 1/4 teaspoon ground nutmeg
- fresh parsley and chives 
- 1/4 onion, diced and fried with PAM
- 1/2 Tbsp olive oil
- 1/4 cup of parmesan cheese

Simply combine all ingredients and set in the fridge while you roll the dough.

Making the Esfihas
Make 2 big balls out of your dough. Pick one and roll it out, not too thin. Using a cookie cutter, make circles of about 3.5 inches or 4. 
Scoop some filling in the center of each circle. Seal the dough shaping it either as a triagle or a squared pillow. 
Brush the egg on top of each esfiha. Put in the preheated oven (380F) for about 15 to 20 minutes, until golden brown in the bottom and edges.

TIPS:
If you chose 2 different fillings, shape each flavor differently.
You can freeze the baked esfihas for about a month in the proper container or bag. Before serving, preheat oven to about 350F and bake it until warm (7 - 10 minutes).
No cookie cutter in the shape? It's all good! Use a big glass or a mug.

Esfihinhas

Quis dar uma variada no cardápio sem sair da minha dieta (sim! Estou de dieta!) e escolhi um cardápio adaptado da culinária do Oriente Médio: tabule com pepinos, tomate e coalhada seca, kafta e... MINI-ESFIHA FECHADA integral com recheio de ricota!
Hmmmm....

Não vou dizer q é super rápido de fazer, mas tb não demora tanto assim. Se vc preferir, pule a kafta e faça um recheio de carne moída refogada com cebola, salsinha e pimenta síria moída. Ou ainda, para continuar no vegetariano, refogue uma escarola e coloque nozes ou uva passa branca e azeite.
Esta receita rende 25 mini esfihas!

Massa
- 50g de fermento biológico fresco ou 1 col (sopa) fermento biológico seco
- 1 xíc (chá) + 4 col (sopa) água morna
- 1/2 xíc (chá) de Óleo ou azeite
- 1/2 col (sopa) sal
- 1 col (sopa) Açúcar
- 550g Farinha de trigo (aproximadamente)
eu usei 250g de farinha integral e 300 da normal
- 1 ovo com uma pitada de sal batido para pincelar

Preparo
Misture todos os ingredientes, menos a farinha, no liqui ou com um fouet. Aos poucos, adicione a farinha misturando com um garfo inicialmente até a massa ficar bem pesada. Termine de adicionar a farinha misturando com as mãos e sovando bem para uma massa bem homogênea.
Reserve em um lugar quente (dentro do microondas ou em cima do forno, por exemplo.) Deixe dobrar de volume por aproximadamente 20 a 30 minutos.
Enquanto isso, prepare o recheio da sua escolha.


Recheio de Ricota (para 1/2 receita!! Dobre se for usar toda a massa!)
- 300g ricota fresca
- 1/4 col (chá) sal
- pimenta síria a gosto (ou pimenta preta moída com canela)
- uma pitada de cravo em pó
- 1/4 col (chá) noz moscada
- salsinha e cebolinha frescos picadinhos
- 1/4 cebola picada bem miudinha frita em um fio de azeite
- 1/2 col (sopa) azeite
- 1/4 xíc (chá) mussarela ou parmesão

Misture todos os ingredientes e reserve.

Montando as esfihas
Faça 2 bolas com a massa e abra-os separadamente. Molde os disquinhos de esfiha com um cortador redondo médio/grande (10 cm?).
Recheie o meio da esfiha e feche em triângulo ou quadrado, conforme preferir.
Pincele o ovo batido em cada esfiha e leve para assar no forno a 200C por 15 minutos ou até dourar.

Dicas:
Se fizer 2 recheios, feche cada um em um formato diferente.
Asse as esfihas e congele por até 1 mês. Na hora de servir coloque em forno médio por 5 a 10 minutinhos.
Não tem cortador de biscoito no tamanho? Use um copo de boca larga ou uma xícara/caneca.

Pra minha amiga Vanessa, a receita do recheio de carne e uma montagem de como fechar as esfihas em formato triangular!
Recheio de carne moída
Faz metade da receita de esfihas, aproximadamente.
500g Carne moída (sirloin 93/7 ou 90/10, aqui nos EUA)
1/2 cebola picadinha
sal (1/2 col (chá))
1 col (sobremesa) amido de milho
4 col (sopa) água
2 col (sopa) molho inglês (ou mais água)
pimenta síria ou pimenta preta moída + canela a gosto
salsinha
Tomate picadinho (opcional)

Frite a cebola em um fiozinho de óleo e jogue a carne. Deixe dourar e tempere com a pimenta síria, salsinha, tomate e sal.
Em uma xícara medida, misture os líquidos e o amido de milho. Jogue na carne e deixe cozinhar uns 3 minutos em fogo médio até engrossar, deixando a carne moída úmida.
Pronto! Agora é só rechear suas esfihas e fechar conforme a foto abaixo, que retirei do petichef.com !
