Snickerdoodle Cookies



Soft, slightly gooey in the middle with a perfect crunchy bite shell! My husband made me these cookies on a rainy day, and they just made everything warmer, brighter and better! If you are not familiar with snickerdoodle cookies, they are basically a sugar cookie. But better! And they have a touch of cinnamon that is simply divine! 
A glass of milk and you're DONE! The perfect recipe for the perfect cookie. The best part (besides enjoying them), is that these are SO EASY to make!

Go for it with: (makes about 40 cookies)
1 cup of unsalted butter, room temperature
1 cup of sugar
1/2 cup of light brown sugar
2 extra large eggs
2 3/4 cups of all purpose flour
3 teaspoons of baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
Coating (in a bowl, mix the ingredients below)
3 Tbsp. turbinado sugar (or regular if you don't have any)
4 teaspoons ground cinnamon
1 Tbsp. light brown sugar

Cream the butter and sugar. Add the eggs and the vanilla and mix well.
In a separate bowl, use a fouet to mix in the dry ingredients: salt, flour, baking powder.
Using a fork or a stand-up mixer at medium speed, incorporate the dry ingredients into the liquid only until combined.
Put the dough in the fridge or freezer for 15 - 20 minutes so it's easier to shape the cookies.
Using a 1 - 2 inches cookie scoop, make little bowls and gently roll them into the coating mixture. Bake in preheated oven (350F) and ungreased baking sheet for about 10 - 12 minutes.
(I dare you to) Let them cool for 5 minutes in a drying rack (if you resist!)
Eat a lot! They are too good to go to waste!
They also make a great Christmas gift if you put them in a cute little bag with a nice bow!
